Cauliflower Salad

Every now and then we all get bored of eating things the same old way - which is why we need to find new things that we can look forward to making and eating for the first time. Cauliflower salad is a great way for you to spice up this delicious vegetable.

This dish - which is also great to serve to family and friends - has a lot of flavor to it and is easy to make. Putting the dish together takes about 30 minutes out of your day. And because it has to marinate overnight it makes getting things ready for dinner easier.
Ingredients:

1 small head cauliflower
2 teaspoons fresh squeezed lemon juice
Dressing (see recipe below)
3 tablespoons minced hard-cooked egg
1 tablespoon minced parsley
Ingredients For Dressing:
1/4 cup extra-virgin olive oil
2 tablespoons red wine vinegar
1 clove garlic, mashed to a paste or put through a garlic press
1 tablespoon small capers,
1 teaspoon paprika
Dash of cayenne pepper
Salt

Dressing Directions:

With whisk beat together olive oil, garlic, capers, vinegar, cayenne pepper, salt, and paprika lightly.
Directions:

Cut cauliflower of the stems and break them into flowerets (not too large). Place flowerets in 1" boiling salted water and lemon juice.

Cover pan and let cauliflower simmer for 10 - 12 minutes. Remove from heat and drain. After cooling cut flowerets very close to the stem.

Pour dressing over cauliflower and stir. Make sure that the cauliflower has absorbed all of the dressing.
Let marinate overnight. When service sprinkle minced egg and parsley. Provides 6 servings.
