Cauliflower Roasted

Most people think that there are only two ways to cook cauliflower - steaming and boiling. While these are the most effective ways (steaming being healthier than boiling) these aren't your only options.

Once you have tried roasting your cauliflower you won't want to go back to boiling. All you need to do is to mix the vegetable with a few choice ingredients and stick it in the oven. It doesn't take long to prepare and cook and it makes for a great new dish to show off to people.

Ingredients:

1 medium head cauliflower (about 2 pounds)
2 tablespoons olive oil
1/2 teaspoon coarse salt
1/4 teaspoon coarsely ground black pepper
Oven needs to be preheated to 400°F. Rinse cauliflower and cut into quarters (1/4 - ½" think). Make sure to cut off the cores and leaves.

Mix together slices of cauliflower, olive oil, pepper, and salt in large bowl or plastic bag. Spread the mixture on baking dish.

Bake for 20 - 25 minutes or till cauliflower is caramelized and tender. Turn cauliflower every 10 minutes.
Remove from oven and serve. Provides 2 - 4 servings.
